It all depends on when and where the knights came from. Medieval Times would not be any thing to measure historical accuracy by.

Yes, many riders,not just knights would wear thigh high riding boots, which could almost be equated with chaps. I'm only familiar with the 15th century.

Equestrians in earlier times were not unlike modern equestrians and their pursuits. They had different types of saddles for different types of activities; war saddles, hunting saddles, pack saddles, side saddles, etc...So it all depends on what the equestrian was doing.
Not sure what your question is with number 3. Knights or men of station usually had a quality ambling horse. Modern equitation as we've come to know it didn't seem to really begin until the 1520s and 30s with the Italian school of horsemanship.
4. Spurs were relatively common to riders of all classes, not just knights. The only differences may be material and decoration. Though again, it would largely depend on time and place to get a more precise answer.
