What the heck are these herbs? I keep getting differening opinions....

Dittany is probably DIttany of Crete (Origanum dictamnus), which is edible and native to the Mediterranean area. I don't know anything about period use, you can find it today only at some nurseries, and maybe dried at some herb-shops. I've seen it grown at the herb garden at the National Cathedral and IIRC at the National Arboretum in DC - if you are looking for a serious research project, you might try contacting them.

As for costus, I've no clue, but this might help: history of the word "costus"

Costus could be a reference to costmary, but that would depend I believe on what region/time frame, etc. the references you are finding come from.
